SIMPLE FRENCH ONION SOUP

INGREDIENTS:

  • 4 Cups Onions – Peeled, Cut in Half & Then Sliced Thin
  • 4 Tbsp. Sugar
  • Cup Butter
  • 2 Oz. or _-cup Sweet Vermouth
  • 2 Oz. or _-cup Brandy
  • 6 Cups Beef Stock or Beef Broth
  • 2 Tsp. Worchester Sauce
  • 2 Tsp. Kosher or Sea salt
  • 1-teaspoon pepper

PREPARATION:

Combine butter, sugar and onions in a large saucepan and cook over medium-low heat until onions are light brown in color – caramelized. Turn up heat to medium- high, add Sweet Vermouth and Brandy and simmer until liquid is cooked off (deglaze). Add beef stock or beef broth and Worchester Sauce and let simmer for 20 minutes. Season with salt and pepper.

Optional: Float croutons and sliced Mozzarella or Swiss cheese on top of soup and brown under the broiler just prior to serving.
