Rutabagas
Rutabagas
are thought to have evolved from a cross between a wild cabbage
and a turnip. Because rutabagas thrive in cooler climates,
they became popular in Scandinavia a long time ago, in fact
in Sweden the rutabaga is known as a “Swede”. In
America, rutabagas were first cultivated in the northern
parts of the country in the early 1800’s. Today,
Canada and the northern states are the prime producers of
the rutabaga.
Nutrition: When cooked, rutabagas contain more than 2/3
of an adult’s daily supply of vitamin C. They are
also a good source of potassium and magnesium. Rutabagas
contain more vitamin A than turnips and are very low in sodium. Raw
rutabagas contain approximately 46 calories per serving, and
cooked only 35.
Storage: For the longest shelf life, always keep rutabagas
refrigerated. Waxed rutabagas will keep up to three months.
