Sweet Yellow Onions

Sweet Onions taste milder because they have
less sulfur compounds than regular yellow onions. It’s
the pyruvic acid in the sulfur that causes tears, harshness and
indigestion. Sweet onions are always grown in soil with
low amounts of sulfur to keep the acid levels low in the onion. Typically,
sweet onions have pyruvic acid levels that measure below 5% (compared
to regular yellow onions running at 10 to 13% levels). Another
factor attributing to sweet onion’s mild flavor is the
sugar content. Sweet onions should contain at least 6%
sugar to be in the “sweet” category. Some sweet
onions, like the Oso Sweet from Chile, have recorded sugar levels
of up to 15%.
